Banana Oat Breakfast Rounds
Love this simple recipe from Bright Line Eating. A solution to ripening bananas that need a purpose!
Ingredients:
1/2 cup nut butter (almond, hazelnut, pumpkin)
1 cup rolled oats
1/4 cup sunflower seeds or nuts/seeds of choice
1 Tbsp chia seeds
3 Ripe banana, mashed
1 ½ cup fruit, try fresh or frozen blueberries or any other small chunks of fruit. Experiment! Try strawberries, cherries, peaches, apples, etc.
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cardamom powder (optional)
Instructions:
Preheat the oven to 350
Mash and stir everything in a small bowl. Stir in blueberries. Let sit for 10 minutes for chia to bind the mixture.
On a baking sheet lined with parchment paper or a non-stick mat, spoon batter into 4 parts and press with spatula into 4 round cookies.
Cook for 30 minutes, take out and let cool a bit.
Eat warm with a bit of Myoko's Vegan Oat Butter. Store the leftovers in the refrigerator.
