Banana Oat Breakfast Rounds

Love this simple recipe from Bright Line Eating. A solution to ripening bananas that need a purpose!

Ingredients:

  • 1/2 cup nut butter (almond, hazelnut, pumpkin)

  • 1 cup rolled oats

  • 1/4 cup sunflower seeds or nuts/seeds of choice 

  • 1 Tbsp chia seeds

  • 3 Ripe banana, mashed

  • 1 ½ cup fruit, try fresh or frozen blueberries or any other small chunks of fruit. Experiment! Try strawberries, cherries, peaches, apples, etc.

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4  tsp cardamom powder (optional)


Instructions:

  1. Preheat the oven to 350 

  2. Mash and stir everything in a small bowl. Stir in blueberries. Let sit for 10 minutes for chia to bind the mixture.

  3. On a baking sheet lined with parchment paper or a non-stick mat, spoon batter into 4 parts and press with spatula into 4 round cookies.

  4. Cook for 30 minutes, take out and let cool a bit. 

  5. Eat warm with a bit of Myoko's Vegan Oat Butter. Store the leftovers in the refrigerator.
