Cool Greek Salad
2 Large Cucumbers, cut in small pieces
½ Pint of mixed cherry tomatoes, cut in half
¼ bunch of fresh basil leaves, finely chopped
¼ cup kalamata olives, cut in half
¼ cup Organic Olive oil
Salt and Pepper to taste
1 large fresh squeezed lemon
Topping Options:
2 inch square of sheep feta cheese (Optional) Explore your local farmer's markets for small farm, more kind cheese options!
Vegan Cheese in small cubes OR
½ avocado cut into small squares with Nutritional Yeast sprinkles on Top!
Sprinkle Hemp seeds!
Instructions:
Take your two cucumbers, peel in stripes the skin, cut in half a long way and scrape out the seeds. Turn over and cut the long way into 3 stripes and cut again into small ½ inch squares.
Cut cherry tomatoes and olives in half. Mix together in a bowl with oil, salt, pepper, basil and lemon juice.
Top with Sheep feta, avocado or vegan cheese.
Sprinkle of Hemp Seeds!
