Cool Greek Salad

  • 2 Large Cucumbers, cut in small pieces

  • ½ Pint of mixed cherry tomatoes, cut in half

  • ¼ bunch of fresh basil leaves, finely chopped

  • ¼ cup kalamata olives, cut in half

  • ¼ cup Organic Olive oil

  • Salt and Pepper to taste

  • 1 large fresh squeezed lemon

Topping Options:

  • 2 inch square of sheep feta cheese (Optional) Explore your local farmer's markets for small farm, more kind cheese options!

  • Vegan Cheese in small cubes OR

  • ½ avocado cut into small squares with Nutritional Yeast sprinkles on Top!

  • Sprinkle Hemp seeds!

Instructions:

  • Take your two cucumbers, peel in stripes the skin, cut in half a long way and scrape out the seeds. Turn over and cut the long way into 3 stripes and cut again into small ½ inch squares.

  • Cut cherry tomatoes and olives in half. Mix together in a bowl with oil, salt, pepper, basil and lemon juice.

  • Top with Sheep feta, avocado or vegan cheese.

  • Sprinkle of Hemp Seeds!
