Purple Sweet Potatoes with Greens

Ingredients:

  • 2 purple sweet potato ( you can use yams if you can't find the purple)

  • 1 bunch, small of collards, kale or chard greens, strip out middle and cut into long strips, then cut in half)

  • Seasoning:

    • Tamari

    • Hot Pepper Sesame Oil

    • Dulse Flakes

    • Nutritional Yeast

  • Toppings:

    • 1 avocado, cut in half,  then cut into small pieces

    • big scoop of kimchi or sauerkraut of your liking!


Instructions:

  1. Cut potatoes into small chunks and place on a steaming tray, steam for about 20 minutes

  2. Add your greens on top to steam for another 10 minutes. Take out greens with tongs, place in a bowl.

  3. Check to see if your potatoes are soft to your liking, then drain out water and add the bowl with greens, top with seasoning, avo and fermented veggies if you like.
