Sassy Collard Greens
🌱 1 large bunch of fresh collard greens
🌱 2 cloves of garlic finely chopped
🌱 ½ onion finely chopped
🍅 2 medium fresh tomatoes (I like using heirloom tomatoes of varying colors)
🌱 1 tsp. Chili flakes
🌱 ½ tsp paprika powder
🌱 ½ tsp cumin powder
🌱 Salt and Pepper to taste.
🌱 3 cups vegetables stock (I like to use 1 Tbsp of Better Than Bouillon) less packaging and better taste.
🌱 1 Tbsp of grapeseed oil (optional as you saute all veggies with broth or water)
In a large pot over medium heat, heat oil or one cup of broth. Saute the onions until slightly softened, about 5 minutes, then add the cumin, red pepper flakes and garlic, cook another minute. Add collard greens and cook for a few minutes. Add the vegetable broth and half the tomatoes, cover pot and bring to a simmer. Cook until greens are tender, about 30 minutes. Add the rest of the tomatoes and season with salt and freshly ground black pepper and cook for another 10 minutes.
