Creamy Kale Salad

1 bunch of Dino Kale (preferred)
1 avocado
1 fresh lemon, juiced
1 tsp. pink salt

Strip kale from the heavy part of the stalk. Lay each piece on top of each other and fold over. Finely chop kale in strips. Place in bowl and add juice of one lemon and 1 tsp. of salt, whole avocado, and massage the kale with your hands until soft and creamy.

Toppings: Cut into small chunks and toss!
½ red pepper or tomato
1 grated carrot
½ cucumber in cube
6 sliced shiitake mushrooms (dry sauteed with no oil in dry pan to cook) optional
1Tbsp Hemp seeds
1Tbsp Pumpkin seeds
1 tsp. of ground black pepper
Coconut Amino Acids/Tamari Soy to taste
Nutritional yeast (lots! :)
Olive oil drizzle (optional)
Sprouts and edible flowers!

Kale salad is perfect just like this, or add some Tahini Dressing for extra creamy goodness!!

Tahini Dressing

½ cup raw tahini
1/4 cup water
2 fresh lemons
½ tsp salt and pepper
palm full of fresh basil or parsley
1 chunk of fresh ginger 2in
1 Tbsp of honey
2 tsp. Tamari or Braggs
dash of cayenne

Blend dressing ingredients in a blender until smooth.
