Sun-dried Tomato and Cashew Romescu

Ingredients:
2 cups sun-dried tomatoes, soaked 1 hour or more
2 cups raw cashews, soaked for 2 hours or more
Zest of 1 orange
3/4 cup olive oil
3⁄4 cup orange juice
1⁄2 cup lemon juice
1⁄4 cup red miso
1 small clove garlic, chopped
1 Tbsp. za’atar seasoning
2 tsp. sea salt
Fresh ground pepper
Directions:
Place all ingredients in a food processor and blend well until thoroughly combined.
Add water if necessary to thin a bit for a soft, spreadable consistency.
Serve with crackers or cucumber slices.
